Ingredients

  • 2.00 slices Chicken Breast (cut into pieces)
  • 1.00 whole Onion (diced)
  • 4.00 liters Garlic (minced)
  • 1.00 tablespoons Ginger (minced)
  • 2.00 teaspoons Cumin
  • 1.00 teaspoons Coriander
  • 1.00 teaspoons Cinnamon
  • 1.00 teaspoons Turmeric
  • 2.00 cups Chicken Broth
  • 1.00 whole Canned Tomatoes (14oz can)
  • 0.50 cups Apricot (dried)
  • 1.00 whole Chickpeas (15oz can)
  • 0.25 cups Cilantro (chopped)
  • 0.25 cups Almonds (sliced)

Instructions

  1. Brown chicken pieces in oil, set aside
  2. Sauté onions, garlic, and ginger
  3. Add cumin, coriander, cinnamon, and turmeric
  4. Return chicken to pot with chicken broth, tomatoes, and apricots
  5. Add chickpeas and simmer covered for 1 hour
  6. Garnish with cilantro and almonds
  7. Serve over couscous
