Ingredients
- 2.00 slices Chicken Breast (cut into pieces)
- 1.00 whole Onion (diced)
- 4.00 liters Garlic (minced)
- 1.00 tablespoons Ginger (minced)
- 2.00 teaspoons Cumin
- 1.00 teaspoons Coriander
- 1.00 teaspoons Cinnamon
- 1.00 teaspoons Turmeric
- 2.00 cups Chicken Broth
- 1.00 whole Canned Tomatoes (14oz can)
- 0.50 cups Apricot (dried)
- 1.00 whole Chickpeas (15oz can)
- 0.25 cups Cilantro (chopped)
- 0.25 cups Almonds (sliced)
Instructions
- Brown chicken pieces in oil, set aside
- Sauté onions, garlic, and ginger
- Add cumin, coriander, cinnamon, and turmeric
- Return chicken to pot with chicken broth, tomatoes, and apricots
- Add chickpeas and simmer covered for 1 hour
- Garnish with cilantro and almonds
- Serve over couscous
