Ingredients

  • 4.00 whole Chicken Breast
  • 0.50 cups All-Purpose Flour
  • 2.00 whole Egg (beaten)
  • 1.50 cups Bread (panko)
  • 1.00 whole Onion (diced)
  • 1.00 cups Carrot (diced)
  • 2.00 whole Potato (cubed)
  • 3.00 tablespoons Curry Powder
  • 0.50 cups Vegetable Oil

Instructions

  1. Pound chicken breasts thin and season with salt
  2. Coat chicken in flour, egg, then panko breadcrumbs
  3. Fry chicken until golden and crispy, set aside
  4. Sauté onions, carrots, and potatoes in a pot
  5. Add water and simmer until vegetables are tender
  6. Stir in curry powder and curry roux until thickened
  7. Slice chicken and serve over rice with curry sauce
