Ingredients

  • 1.00 whole Onion (diced)
  • 1.00 whole Bell Pepper (diced)
  • 4.00 liters Garlic (minced)
  • 6.00 cups Chicken Broth
  • 1.00 whole Canned Tomatoes (14oz can)
  • 1.00 whole Black Beans (15oz can)
  • 2.00 teaspoons Cumin
  • 1.00 teaspoons Chili Powder
  • 2.00 tablespoons Lime Juice
  • 1.00 slices Chicken Breast (cooked and shredded)
  • 4.00 whole Tortilla (cut into strips)
  • 0.50 cups Cheddar Cheese (shredded)
  • 1.00 whole Avocado (sliced)
  • 0.25 cups Cilantro (chopped)

Instructions

  1. Sauté onions, bell peppers, and garlic in oil
  2. Add chicken broth, diced tomatoes, and black beans
  3. Season with cumin, chili powder, and lime juice
  4. Add shredded chicken and simmer for 20 minutes
  5. Fry tortilla strips until crispy
  6. Serve soup topped with tortilla strips, cheese, avocado, and cilantro
