- 1.00 whole Onion (diced)
- 1.00 whole Bell Pepper (diced)
- 4.00 liters Garlic (minced)
- 6.00 cups Chicken Broth
- 1.00 whole Canned Tomatoes (14oz can)
- 1.00 whole Black Beans (15oz can)
- 2.00 teaspoons Cumin
- 1.00 teaspoons Chili Powder
- 2.00 tablespoons Lime Juice
- 1.00 slices Chicken Breast (cooked and shredded)
- 4.00 whole Tortilla (cut into strips)
- 0.50 cups Cheddar Cheese (shredded)
- 1.00 whole Avocado (sliced)
- 0.25 cups Cilantro (chopped)
Instructions
- Sauté onions, bell peppers, and garlic in oil
- Add chicken broth, diced tomatoes, and black beans
- Season with cumin, chili powder, and lime juice
- Add shredded chicken and simmer for 20 minutes
- Fry tortilla strips until crispy
- Serve soup topped with tortilla strips, cheese, avocado, and cilantro
