Ingredients

  • 1.00 whole Onion (diced)
  • 2.00 whole Carrot (diced)
  • 2.00 whole Celery (diced)
  • 4.00 liters Garlic (minced)
  • 6.00 cups Vegetable Broth
  • 1.00 whole Canned Tomatoes (14oz can)
  • 1.00 whole Kidney Beans (15oz can)
  • 1.00 cups Zucchini (diced)
  • 2.00 cups Spinach (chopped)
  • 1.00 cups Macaroni
  • 1.00 teaspoons Dried Basil
  • 1.00 teaspoons Dried Oregano
  • 0.25 cups Olive Oil

Instructions

  1. Heat olive oil in a large pot
  2. Sauté onions, carrots, and celery until softened
  3. Add garlic and cook for 1 minute
  4. Pour in vegetable broth and canned tomatoes
  5. Add kidney beans, pasta, zucchini, and spinach
  6. Season with basil, oregano, salt, and pepper
  7. Simmer for 20 minutes until pasta is cooked
  8. Serve with grated parmesan
