Ingredients
- 1.00 whole Onion (diced)
- 2.00 whole Carrot (diced)
- 2.00 whole Celery (diced)
- 4.00 liters Garlic (minced)
- 6.00 cups Vegetable Broth
- 1.00 whole Canned Tomatoes (14oz can)
- 1.00 whole Kidney Beans (15oz can)
- 1.00 cups Zucchini (diced)
- 2.00 cups Spinach (chopped)
- 1.00 cups Macaroni
- 1.00 teaspoons Dried Basil
- 1.00 teaspoons Dried Oregano
- 0.25 cups Olive Oil
Instructions
- Heat olive oil in a large pot
- Sauté onions, carrots, and celery until softened
- Add garlic and cook for 1 minute
- Pour in vegetable broth and canned tomatoes
- Add kidney beans, pasta, zucchini, and spinach
- Season with basil, oregano, salt, and pepper
- Simmer for 20 minutes until pasta is cooked
- Serve with grated parmesan
