Ingredients
- 1.00 whole Onion (diced)
- 1.00 whole Bell Pepper (diced)
- 4.00 liters Garlic (minced)
- 1.00 teaspoons Cumin
- 1.00 teaspoons Paprika
- 0.50 teaspoons Cayenne Pepper
- 1.00 whole Canned Tomatoes (28oz can)
- 2.00 tablespoons Tomato Paste
- 6.00 whole Egg
- 0.25 cups Olive Oil
- 0.25 cups Parsley (chopped)
Instructions
- Heat olive oil in a large skillet
- Sauté onions and bell peppers until softened
- Add garlic, cumin, paprika, and cayenne pepper
- Pour in canned tomatoes and tomato paste, simmer for 10 minutes
- Make wells in the sauce and crack eggs into them
- Cover and cook until eggs are set to your liking
- Garnish with parsley and serve with crusty bread
