Ingredients

  • 1.00 whole Onion (diced)
  • 1.00 whole Bell Pepper (diced)
  • 4.00 liters Garlic (minced)
  • 1.00 teaspoons Cumin
  • 1.00 teaspoons Paprika
  • 0.50 teaspoons Cayenne Pepper
  • 1.00 whole Canned Tomatoes (28oz can)
  • 2.00 tablespoons Tomato Paste
  • 6.00 whole Egg
  • 0.25 cups Olive Oil
  • 0.25 cups Parsley (chopped)

Instructions

  1. Heat olive oil in a large skillet
  2. Sauté onions and bell peppers until softened
  3. Add garlic, cumin, paprika, and cayenne pepper
  4. Pour in canned tomatoes and tomato paste, simmer for 10 minutes
  5. Make wells in the sauce and crack eggs into them
  6. Cover and cook until eggs are set to your liking
  7. Garnish with parsley and serve with crusty bread
